Almond Flour Chicken Tenders

– 1 ½ pounds chicken tenders – 1 ½ cups dill pickle juice, sugar-free, zero calorie optional - such as Bubbies – ⅔ cup finely grated parmesan – ⅔ cup super-fine almond flour – ½ teaspoon garlic powder – ½ teaspoon sea salt – ¼ teaspoon fresh ground black pepper – 3 eggs beaten – Avocado Oil for cooking

Place the chicken in a large bowl and pour the pickle juice over it. Allow to sit at room temperature for 30 minutes or refrigerate for up to two hours.

In a shallow dish, combine the parmesan, almond flour, garlic, powder, salt, and pepper.

In a separate bowl, beat the eggs.

Drain the chicken and pat it dry with paper towels.

Dip the chicken into the eggs.

Then coat with the parmesan and almond flour mixture.

Heat ½ inch of avocado oil in a skillet to 350 degrees. Cook for about 5 minutes per side until golden brown and the internal temperature reaches 160° F.
