Cauliflower Cilantro Lime Rice

Cilantro Lime Cauliflower Rice is sure to delight with tangy lime and aromatic cilantro. With just a few simple ingredients and a quick sauté, you can create this vibrant and delicious side dish that's not only low-carb but also bursting with flavor .

– 2 tablespoons olive oil – 2 tablespoons minced red onion – 1 garlic clove minced – 12 ounces riced cauliflower – ½ teaspoon sea salt – ¼ teaspoon fresh ground black pepper – ¼ cup chopped cilantro – 1 lime zested and juiced


Heat oil in a large skillet over medium-high heat.


Add onion and garlic and cook for 1 minute.


Add cauliflower rice, salt, and pepper. 


Reduce heat to medium and cover and cook for 5 to 10 minutes to desired tenderness.


Remove from heat.


Stir in cilantro, lime juice, and lime zest.
