Curry Chicken Salad

– 1 pound cooked chopped or shredded chicken 4 cups – 4 green onions chopped – 2 stalks celery chopped – ⅓ cup toasted pecans chopped – ¼ cup chopped cilantro – 1 cup mayonnaise – 1 tablespoon lemon juice – 1 ½ tablespoons powdered Swerve – 2 teaspoons curry powder – 1 teaspoon ground turmeric – 1 teaspoon ground cumin – Salt and pepper to taste


In a large bowl, combine the chicken, green onions, celery, pecans, and cilantro.


In a small bowl, whisk together the mayonnaise, lemon juice, powdered Swerve, curry powder, turmeric, and cumin.


Season to taste with salt and pepper.


Add the mayonnaise to the chicken mixture and toss to combine.
