Heat the oil over medium heat.

Add the onion and celery, and thyme. Cook, stirring occasionally, for 5 minutes.

Increase the heat to high and add the broth. Bring to a boil and then reduce to medium-low.

Cook for 15 minutes. Add the chicken, salt, and pepper.

Stir in the palmini noodles.
