– 1 ½ pounds chicken tenders – 1 ½ cups dill pickle juice, sugar-free, zero calorie optional - such as Bubbies – ⅔ cup finely grated parmesan – ⅔ cup super-fine almond flour – ½ teaspoon garlic powder – ½ teaspoon sea salt – ¼ teaspoon fresh ground black pepper – 3 eggs beaten – Avocado Oil for cooking

– Place the chicken in a large bowl and pour the pickle juice over it. Allow to sit at room temperature for 30 minutes or refrigerate for up to two hours.

– In a shallow dish, combine the parmesan, almond flour, garlic, powder, salt, and pepper. – In a separate bowl, beat the eggs.

– Drain the chicken and pat it dry with paper towels.

– Dip the chicken into the eggs, and then coat with the parmesan mixture. – Use your hands to gently press the coating into the chicken.

– Heat ½ inch of avocado oil in a skillet to 350 degrees.

– Cook for about 5 minutes per side until golden brown and the internal temperature reaches 160° F. – Allow to rest for 5 to 10 minutes before serving.
