Cauliflower is covered in a punchy mayonnaise marinade, roasted to perfection and then drizzled with a mixture of butter, Parmesan cheese, and lemon juice. This one is impossible not to make over and over again.


– 1 head cauliflower – ⅓ cup mayonnaise – 1 tablespoon Dijon Mustard – Salt and Pepper – 2 tablespoons butter melted – ¼ cup fresh grated Parmesan – 1 tablespoon lemon juice – Salt and Pepper to taste

– Preheat oven to 420 degrees.

– Cut cauliflower into florets and place in a large bowl.

– In a small bowl, whisk together the mayonnaise and Dijon Mustard. Season with salt and pepper.

– Pour the mayonnaise over the cauliflower and toss to combine.

– Spread in a single layer on a roasting pan or on an oven safe cooling rack sitting on a cookie sheet.
