Reuben Slaw

This Keto Reuben Slaw has all the flavors of your favorite sandwich within the confines of a bowl. Crisp cabbage is tossed with corned beef, cheese, and sauerkraut and then tossed with a delicious punchy dressing. Finish it off with a sprinkling of toasted caraway seeds, and you have a delicious meal that is the perfect addition to your meal plan.

Slaw – 6 cups shredded green cabbage – ½ pound deli corned beef chopped – 7 ounces Swiss cheese sliced into strips – 1 cup sauerkraut Dressing – ½ cup mayonnaise – 3 tablespoons keto ketchup – ⅓ cup chopped dill pickles – 1 tablespoon dill pickle juice – Salt and pepper to taste – 1 teaspoon crushed toasted caraway seeds


Place the cabbage, corned beef, Swiss cheese, and sauerkraut in a large bowl.


Stir to combine.


Place the mayonnaise, ketchup, dill pickles, pickle juice, salt, and pepper in a medium bowl.




Toss the slaw with the dressing and sprinkle with the caraway seeds. 


Refrigerate for 30 minutes before serving.
