- 2 tablespoons extra virgin olive oil
- ½ medium onion chopped
- 1 teaspoon minced garlic
- 1 cup keto ketchup
- ¾ cup dry red wine
- 2 tablespoons brown sugar substitute like Swerve or Surkin Gold
- 1 chipotle chili in adobo sauce minced
- 2 teaspoons liquid smoke
- 1 tablespoon Dijon Mustard
- 1 teaspoon sea salt
- ½ teaspoon fresh ground black pepper
Heat the oil in a medium sauce pan. Add onion and cook for 5 minutes.
Add garlic and cook for one minute longer.
Add ketchup, wine, brown sugar substitute, chipotle chili, liquid smoke, Dijon mustard, salt, and pepper to the saucepan.
Bring to a boil, and then reduce to a simmer.
Cook, stirring often, for about 15 minutes, until the sauce thickens.
Allow to cool slightly and process in a food processor or blender for 2 to 3 minutes, until smooth.
