Ingredients

Salt and pepper

Optional Toppings: radishes
sliced olives, sliced jalapeño, cilantro, red onion, diced tomatoes, green onions, lime wedges, avocado, sour cream
Instructions
Cook the Meat
Heat oil in a large skillet over medium-high heat. Add the onion and cook for 5 minutes. Add the garlic and cook for 1 more minute.
Add the beef to the pan, breaking it up with the back of a spoon.
Cook for 5 minutes, stirring to continue to break up the meat.
Sprinkle with chili powder, cumin, red pepper flakes, chipotle chili powder, salt and pepper. Cook for another 4 minutes.
Make the Nachos
Place the oven rack in the top position. Preheat the broiler to high.
Line a baking sheet with parchment and arrange the chips on the pan. Spoon the beef mixture over the chips and sprinkle with cheese.
Cook for about 2 minutes, until the cheese is melted.
Top
Top with the desired toppings and serve immediately.
