Keto Ranch Chicken

This Keto Ranch Chicken is long on flavor but astoundingly easy to make! You can use my ranch dressing recipe, or if you are short on time store bought will work too. Either way, you’ve got tender moist chicken with less than 20 minutes of hands-on time.

Ingredients

  • cup keto ranch dressing
  • ¼ cup extra virgin olive oil
  • 1 pound boneless skinless chicken breast
  • 1 medium tomato sliced
  • 4 ounces cheddar cheese shredded

Instructions

  • In a small bowl, whisk together ranch dressing and olive oil.
  • Place chicken in a plastic zip-top bag or shallow dish and pour the ranch mixture over it.
  • Marinate for at least 30 minutes, up to overnight.
  • Preheat a broiler to high
  • Spray an oven-safe skillet or grill pan with oil.
  • Cook over medium-high heat for 5 to 7 minutes per side, until golden brown and cooked through.
  • Place tomato slices on top of the chicken and sprinkle with cheddar cheese.
  • Heat under the broiler for 2 to 3 minutes, until the cheese is melted.
