Dressing
- ¼ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon dried oregano or ½ tablespoon fresh chopped
- ½ teaspoon sea salt
- ¼ teaspoon fresh ground black pepper
Salad
- 4 cups chopped romaine lettuce
- 1 medium cucumber peeled, seeded, and chopped
- 10 cherry or grape tomatoes halved
- ½ cup crumbled feta cheese 2 ounces
- ¼ cup pitted and sliced kalamata olives
Make the dressing by combining the olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, and pepper in a blender or mason jar.
Process in your blender, or use an immersion blender to combine.
In a large bowl combine the lettuce, cucumber, tomatoes, feta, and olives.
Toss with the dressing and serve immediately.
