Ingredients

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried oregano or ½ tablespoon fresh chopped
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

Salad

  • 4 cups chopped romaine lettuce
  • 1 medium cucumber peeled, seeded, and chopped
  • 10 cherry or grape tomatoes halved
  • ½ cup crumbled feta cheese 2 ounces
  • ¼ cup pitted and sliced kalamata olives

Instructions

  • Make the dressing by combining the olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, and pepper in a blender or mason jar.
  • Process in your blender, or use an immersion blender to combine.
  • In a large bowl combine the lettuce, cucumber, tomatoes, feta, and olives.
  • Toss with the dressing and serve immediately.
