- 2 pounds beef chuck roast
- Salt and Pepper
- 1 tablespoon avocado oil
- ½ cup onion diced
- 1 poblano chili pepper seeded and diced
- 1 chipotle chili pepper diced
- 1 teaspoon minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon sea salt
- ½ teaspoon cayenne pepper
- 15 ounces tomato sauce
- 2 tablespoons apple cider vinegar
- 2 teaspoons brown sugar substitute optional
Sprinkle the chuck roast well with salt and pepper. Time permitting, refrigerate for at least 4 hours, or overnight.
On the stovetop or using the saute function on your slow cooker, heat oil to medium-high heat.
Add onion, poblano chili pepper, and chipotle chili pepper. Cook for 6 minutes, stirring often.
Add garlic, cumin, coriander, salt and cayenne pepper — Cook for 1 more minute.
Add tomato sauce, apple cider vinegar, and brown sugar substitute.
Stir and add meat.
Cover and cook on low for 6 to 8 hours.
Tips & Tricks
- To Freeze This Recipe - Allow the meat to cool and divide the meat, along with the cooking liquid, into large zip-top plastic freezer bags. Seal and freeze for up to 6 months. Don’t forget to label it! To use, thaw in the refrigerator overnight and reheat until the internal temperature reaches 155 degrees. You can do this on the stovetop or in about 2 hours in a slow cooker on high.
- The chipotle chili pepper makes this dish a touch spicy. If heat isn't your thing, or if you are making this for children, you may want to use half of omit it.

- Add 2 teaspoons chili power with the onion. Just before serving, top with a squeeze of lime juice. (This is fabulous on tacos!)
- You can ½ cup of my Keto BBQ Sauce (or THIS keto-friendly purchased option), plus ½ cup of beef broth of a quick and easy dump recipe.
- Use 1 teaspoon garlic powder in place of the fresh minced garlic.
- Add 2 tablespoons brown mustard and 1 teaspoon smoked paprika.
