Stuffed Flank Steak with Feta, Bacon, and Spinach

- 2 pounds flank steak
- 1 tablespoon avocado oil
- ½ teaspoon sea salt
- ½ teaspoon garlic powder
- ¼ teaspoon fresh ground pepper
- 8 ounces bacon cooked and crumbled
- 2 ounces feta cheese crumbled
- 1 cup baby spinach chopped
Place steak in a large zip-top bag. Using a meat mallet, pound to ¼-inch thickness.
Brush both sides of the steak with avocado oil. Mix the salt, garlic powder, and pepper in a small dish and sprinkle over the steak. Sprinkle the bacon and feta cheese and top then with the spinach.
Starting at one of the long sides, roll the steak up tightly.
Tie with kitchen string at 3-inch intervals.
Air Fryer Instructions
Preheat your air fryer to 400 degrees. Cook for 7 minutes, flip and cook for another 7 minutes, or until the center registers 120 degrees F for medium-rare. (Adjust cooking time for the desired doneness.)
Allow to rest for 15 minutes prior to serving
Oven/Stove Instructions
Preheat oven to 300 degrees. Heat an oven safe skillet to high heat. Sear the steak on all sides until brown.
Bake for 10 minutes, or to the desired doneness.
