Stuffed Flank Steak with Feta, Bacon, and Spinach

These stuffed flank steak pinwheels are perfect for entertaining, and take less than 30 minutes to make!

Ingredients

  • 2 pounds flank steak
  • 1 tablespoon avocado oil
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon fresh ground pepper
  • 8 ounces bacon cooked and crumbled
  • 2 ounces feta cheese crumbled
  • 1 cup baby spinach chopped

Instructions

  • Place steak in a large zip-top bag. Using a meat mallet, pound to ¼-inch thickness.
  • Brush both sides of the steak with avocado oil. Mix the salt, garlic powder, and pepper in a small dish and sprinkle over the steak. Sprinkle the bacon and feta cheese and top then with the spinach.
  • Starting at one of the long sides, roll the steak up tightly.
  • Tie with kitchen string at 3-inch intervals.

Air Fryer Instructions

  • Preheat your air fryer to 400 degrees. Cook for 7 minutes, flip and cook for another 7 minutes, or until the center registers 120 degrees F for medium-rare. (Adjust cooking time for the desired doneness.)
  • Allow to rest for 15 minutes prior to serving

Oven/Stove Instructions

  • Preheat oven to 300 degrees. Heat an oven safe skillet to high heat. Sear the steak on all sides until brown.
  • Bake for 10 minutes, or to the desired doneness.
