Peanut Butter Energy Balls

When you need a quick nibble, these Peanut Butter Chocolate Chip Balls are perfect! They are quick to make and keep great in the refrigerator or freezer.

Ingredients

  • 1 cup unsweetened shredded coconut
  • ½ cup chopped pecans
  • ¾ cup creamy peanut butter
  • 2 tablespoon sugar free maple syrup like choc-zero
  • ½ teaspoon vanilla extract
  • cup Lily’s chocolate chips

Instructions

  • In the bowl of a food processor combine the coconut, pecans, peanut butter, maple syrup, and vanilla extract. Process until smooth.

  • Transfer to a bowl and stir in chocolate chips.

  • Using a small cookie scoop, scoop out the dough and then form into balls.
  • Place on a parchment lined baking sheet and cover. Chill for at least 30 minutes.
