Peanut Butter Energy Balls
When you need a quick nibble, these Peanut Butter Chocolate Chip Balls are perfect! They are quick to make and keep great in the refrigerator or freezer.
- 1 cup unsweetened shredded coconut
- ½ cup chopped pecans
- ¾ cup creamy peanut butter
- 2 tablespoon sugar free maple syrup like choc-zero
- ½ teaspoon vanilla extract
- ⅓ cup Lily’s chocolate chips
In the bowl of a food processor combine the coconut, pecans, peanut butter, maple syrup, and vanilla extract. Process until smooth.
Transfer to a bowl and stir in chocolate chips.
Using a small cookie scoop, scoop out the dough and then form into balls.
Place on a parchment lined baking sheet and cover. Chill for at least 30 minutes.
