- 1 avocado
- ⅓ cup almond flour
- ⅓ cup parmesan cheese
- 1 teaspoon garlic powder
- Salt and Pepper
- 2 eggs
- 1 tablespoon lemon juice
Sauce
- ⅓ cup mayonnaise
- 1 tablespoon Sriracha
- ½ teaspoon garlic powder
Cut the avocado into ½-inch thick wedges. Combine the almond flour, parmesan cheese, and garlic powder in a shallow bowl.
Beat the eggs and lemon juice together in another shallow bowl. Carefully dip the avocado slices in the eggs and then dredge in the almond flour mixture. Press the coating into the sides of the avocado to help it stick.
Oven
Preheat the oven to 425 ° F. Line a baking sheet with parchment paper.
Transfer to the coated avocado to the prepared baking sheet. Spray the avocado slices with cooking spray. Place the baking sheet in the oven and cook for 16 to 20 minutes, until golden brown.
Sauce
Meanwhile, in a small bowl, whisk together the mayonnaise, Sriracha, and garlic powder. Refrigerate until ready to use
- Avoid overly ripe avocado - whether you are baking, air frying, or decide to try this recipe deep-fried, ripe avocados will fall apart.
- I recommend the smaller Hass avocado rather than the larger kind grown in Florida. They are creamier and less watery.
- If your avocado is very unripe, the best way to ripen them is in the refrigerator. This can take up to four days, but keep in mind that we want our avocados to be just slightly under-ripened for this recipe.
