Ingredients

Slaw

  • 6 cups shredded green cabbage
  • ½ pound deli corned beef chopped
  • 7 ounces Swiss cheese sliced into strips
  • 1 cup sauerkraut

Dressing

  • ½ cup mayonnaise
  • 3 tablespoons keto ketchup
  • cup chopped dill pickles
  • 1 tablespoon dill pickle juice
  • Salt and pepper to taste
  • 1 teaspoon crushed toasted caraway seeds

Instructions

  • In a large bowl, combine the cabbage, corned beef, Swiss cheese, and sauerkraut.
  • In a medium bowl, combine the mayonnaise, ketchup, dill pickles, pickle juice, salt, and pepper.
  • Toss the slaw with the dressing and sprinkle with the caraway seeds. Refrigerate for 30 minutes before serving.
