Slaw
- 6 cups shredded green cabbage
- ½ pound deli corned beef chopped
- 7 ounces Swiss cheese sliced into strips
- 1 cup sauerkraut
Dressing
- ½ cup mayonnaise
- 3 tablespoons keto ketchup
- ⅓ cup chopped dill pickles
- 1 tablespoon dill pickle juice
- Salt and pepper to taste
- 1 teaspoon crushed toasted caraway seeds
In a large bowl, combine the cabbage, corned beef, Swiss cheese, and sauerkraut.
In a medium bowl, combine the mayonnaise, ketchup, dill pickles, pickle juice, salt, and pepper.
Toss the slaw with the dressing and sprinkle with the caraway seeds. Refrigerate for 30 minutes before serving.
