Keto Chicken Tenders

- 1 ½ pounds chicken tenders
- 1 ½ cups dill pickle juice, sugar-free, zero calorie optional - such as Bubbies
- ⅔ cup finely grated parmesan
- ⅔ cup super-fine almond flour
- ½ teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ teaspoon fresh ground black pepper
- 3 eggs beaten
- Avocado Oil for cooking
Place the chicken in a large bowl and pour the pickle juice over it. Allow to sit at room temperature for 30 minutes or refrigerate for up to two hours.
In a shallow dish, combine the parmesan, almond flour, garlic, powder, salt, and pepper.
In a separate bowl, beat the eggs.
Drain the chicken and pat it dry with paper towels.
Dip the chicken into the eggs, and then coat with the parmesan mixture.
Use your hands to gently press the coating into the chicken.

Preheat the Air Fryer to 400 degrees. Spray the chicken with the oil. Cook for 6 minutes.
Flip and then respray the chicken. Cook for another 3 minutes, or until the internal temperature reaches 160° F.
Rest for 5 to 10 minutes before serving.
