Instructions
Heat a small skillet to medium and add poppy seeds. Cook for 90 seconds, until fragrant.
In a blender, combine the olive oil, red wine vinegar, poppy seeds, sweetener, lemon juice, mustard, salt, and pepper.
Process until smooth.
Refrigerate until serving.
