Keto Gummy Bears

Keto candy doesn't get any better than these delicious gummy bears.

Ingredients

  • 1 cup keto-friendly berries - blueberries strawberries, or raspberries
  • ¼ cup lemon or lime juice
  • ¼ cup water
  • 3 tablespoons unflavored gelatin
  • ¼ cup Swerve Confectioners more or less to taste
  • Optional: Natural food coloring

Instructions

  • Place the berries and juice in a blender and process until smooth. Transfer to a saucepan over low heat.
  • If there are any seeds or skins you would like to remove, you can strain the mixture.
  • Place the water in a small bowl and sprinkle the gelatin over it. Allow it to sit for 5 minutes.
  • Add the gelatin mixture and the Swerve and increase the heat to medium-low.
  • Cook until the gelatin and Swerve are dissolved, whisking vigorously to incorporate the gelatin and being careful not to let the mixture boil.
  • Add in the food coloring if you are using.
  • Place into molds and refrigerate until solid.

Notes

Please note that sugar alcohols are deducted from the carb count.
