  • 2 tablespoons olive oil
  • ½ cup diced yellow onion
  • 1 stalk celery diced
  • 1 teaspoon minced fresh thyme
  • 8 cups chicken broth
  • 4 cups shredded cooked chicken
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper
  • 1 can palmini noodles rinsed
  • For garnish: fresh parsley


  • Heat the oil over medium heat.
  • Add the onion and celery, and thyme. Cook, stirring occasionally, for 5 minutes.
  • Increase the heat to high and add the broth. Bring to a boil and then reduce to medium-low.
  • Cook for 15 minutes. Add the chicken, salt, and pepper.
  • Stir in the palmini noodles, and cook for another 5 minutes, until heated through.
