Arugula Avocado Salad

With creamy avocados, crunchy red onion, and peppery arugula, it all comes together with a zesty lime dressing.  This salad will quickly become a weeknight go-to.

Dressing – 1 lime juiced – 3 tablespoons extra virgin olive oil – ¼ teaspoon sea salt – 1 pinch cayenne pepper Salad – 6 cups baby arugula – ½ red onion sliced – ½ cup cherry tomatoes halved – 1 large avocado peeled and diced

– In a glass jar or blender, combine the lime juice, olive oil, salt, and cayenne pepper.  Shake or process until combined.

– In a large bowl, stir together the arugula, red onion, and cherry tomatoes.

– Toss with half of the dressing.

– Transfer to serving bowls and top with diced avocado.
