    Arugula Avocado Salad

    Looking for a refreshing, no-fuss dish that's satisfying? This vibrant 15-minute Arugula Avocado Salad is the perfect light lunch or easy side! With creamy avocados, crunchy red onion, and peppery arugula, it all comes together with a zesty lime dressing.  This salad will quickly become a weeknight go-to.

    This Avocado Salad with Lime Dressing is the perfect easy side dish, that will leave you feeling great!

    It's light, refreshing, and perfect for adding a splash of color to your table—trust me, you'll be making this one on repeat at home!

    Arugula, avocado, tomato, onion, lime, olive oil and seasonings.

    Ingredients

    • Lime juice: Fresh lime juice really pops in this arugula salad, but you could use lemon juice if you prefer.
    • Olive oil: This is the time to pull out the good stuff!
    • Sea salt: Sea salt is my go-to, but you could use kosher salt or table salt.
    • Cayenne pepper: Offers a gentle heat that livens up the salad without overpowering it. Feel free to omit.
    • Arugula: Baby spinach could be substituted if you don't enjoy arugula's peppery bite.
    • Red onion: You can soak the onion in ice water or vinegar for about 15 minutes to remove some of the sharpness.
    • Cherry tomatoes: Grape tomatoes or diced tomatoes will also work.
    • Avocado: You will want one large ripe avocado.

    Tips and Tricks

    • If you want to elevate the dressing, a teaspoon of fresh minced garlic, fresh oregano, dijon mustard and freshly ground black pepper can be added.
    • To prevent onion from overpowering the salad, soak sliced onions in cold water for a few minutes to mellow their sharpness.
    • Keep the dressing separate and don't add the avocado or toss the salad until you are ready to serve.
    • Feel free to add what you like to thas salad.  I love cucumbers, parmesan cheese,  feta cheese, pine nuts, walnuts, almonds, or pecans.
    • Pair this salad with grilled chicken, salmon,  or shrimp for a more substantial meal.

    Step by Step Instructions

    Oil, seasonings, and lime juice in a mason jar.
    Combine lime juice, olive oil, salt, and cayenne in a jar or blender.

    Shake or process until mixed. Alternatively, whisk the dressing together in a small bowl.

    Chop your onion and tomato.

    In a large bowl, stir arugula, red onion, and cherry tomatoes.

    Toss with half the dressing. Divide into bowls and add diced avocado. Drizzle with the remaining dressing and serve immediately.

    Ingredients

    Dressing

    • 1 lime juiced
    • 3 tablespoons extra virgin olive oil
    • ¼ teaspoon sea salt
    • 1 pinch cayenne pepper

    Salad

    • 6 cups baby arugula
    • ½ red onion sliced
    • ½ cup cherry tomatoes halved
    • 1 large avocado peeled and diced

    Instructions

    • In a glass jar or blender, combine the lime juice, olive oil, salt, and cayenne pepper.  Shake or process until combined.
    • In a large bowl, stir together the arugula, red onion, and cherry tomatoes.  Toss with half of the dressing.
    • Transfer to serving bowls and top with diced avocado.
    • Sprinkle with the remaining dressing and serve immediately.
