Peanut Butter Energy Balls are an excellent grab and go option for breakfast or a snack. With just six ingredients, these little nibbles are perfect to make on the weekend to enjoy throughout the week.


– 1 cup unsweetened shredded coconut – ½ cup chopped pecans – ¾ cup creamy peanut butter – 2 tablespoon sugar free maple syrup like choc-zero – ½ teaspoon vanilla extract – ⅓ cup Lily’s chocolate chips

- In the bowl of a food processor combine the coconut, pecans, peanut butter, maple syrup, and vanilla extract.

– Process until smooth.

– Transfer to a bowl.

– Stir in chocolate chips.

– Using a small cookie scoop, scoop out the dough and then form into balls.

– Place on a parchment lined baking sheet and cover. Chill for at least 30 minutes.
