If you crave hearty, simple soups that warm you up on a chilly day, you're going to love this quick and easy Keto Chicken Soup! This dish is savory, satisfying, and can be ready in about 30 minutes. Best of all, you only need eight ingredients plus your noodles of choice, and everything comes together in one pot on the stove. (I like to add palmini noodles for an easy low-carb option!).

Ingredients

– 2 tablespoons olive oil – ½ cup diced yellow onion – 1 stalk celery diced – 1 teaspoon minced fresh thyme – 8 cups chicken broth – 4 cups shredded cooked chicken – ½ teaspoon sea salt – ¼ teaspoon fresh ground black pepper – 1 can palmini noodles rinsed – For garnish: fresh parsley

Step 1

Heat the oil over medium heat.

Step 2

Add the onion and celery, and thyme. Cook, stirring occasionally, for 5 minutes.

Step 3

Increase the heat to high and add the broth. Bring to a boil and then reduce to medium-low. Cook for 15 minutes. Add the chicken, salt, and pepper.

Step 4

Stir in the palmini noodles, and cook for another 5 minutes, until heated through.
