Keto Creamed Spinach

Ingredients

– ¼ cup unsalted butter – 1 tablespoon minced garlic – 16 ounces chopped baby spinach or frozen spinach – 1 cup heavy cream – 3 ounces cream cheese cubed – Salt and pepper – 1 cup grated Parmesan cheese

Melt the butter in a large oven-safe skillet over medium-high heat. Add the garlic and cook for 30 seconds.

Add the spinach in batches, moving it around with a spatula and allowing it to wilt before adding the next batch.

Add the heavy cream and cream cheese. Bring to a simmer and then reduce the heat to low. Cook, stirring occasionally for 45 minutes. Season to taste with salt and pepper.

Sprinkle with Parmesan cheese and place under the broiler until the cheese has melted, about 2 minutes.
