Keto Enchiladas

Imagine perfectly spiced ground beef, mingling with tangy green chilies and creamy sour cream, all tucked cozily into a keto-friendly tortilla. But that's not all – we top it off with a lively enchilada sauce and a generous sprinkle of cheese for a flavor fiesta. And the best part? It's low-carb, but it feels like a feast, not a compromise. 

– 1 ¼ cups keto enchilada sauce or keto-friendly purchased, divided – 1 tablespoon avocado oil – ½ cup chopped onion – 2 tablespoons keto taco seasoning – ¾ pound ground beef – 4 ounces diced green chiles drained – ⅓ cup sour cream – 8 keto tortillas – ¾ cups shredded cheddar cheese

Preheat oven to 350 degrees. Spray a 9" x 9" casserole dish with cooking spray and spread ¼ cup of the enchilada sauce on the bottom.

Heat oil in a large skillet over medium-high heat. Add the onion and cook for 5 minutes, until tender. Add the taco seasoning and stir for 30 seconds.

Add the ground beef to the skillet, and cook until browned, breaking it up with the back of a spoon.

Drain the excess fat if desired. Stir in the green chiles and sour cream. Divide the meat between the tortillas. Roll up and place seam side down in the prepared baking dish.

Top with the enchilada sauce and shredded cheese.

Bake for 20 minutes.
