With a rich, perfectly seasoned broth, garlic, and onions, all topped off with Gruyere cheese, you have a hearty soup that is impossible not to love. Try it once, and you will be hooked.
– Heat the butter and avocado oil in a large saucepan over medium-high heat. Add the onions and thyme and cook, stirring occasionally, for 10 minutes.
– Reduce heat to medium and cook for another 30 minutes, until the onions are a deep golden brown. Stir in the garlic and cook for 1 more minute.
