It always amazes me how a simple marinade can transform boneless chicken from something boring to something that will leave your taste buds doing a little happy dance. These juicy Keto Grilled Chicken Thighs have just five ingredients (other than salt and pepper) and require almost no prep time. It is perfect for summer when there are a million things that you would rather be doing other than spending time in the kitchen.


– 2 lemons juice and zest – 2 tablespoon Dijon mustard – 1 teaspoon minced garlic – 2 teaspoons sea salt – ½ teaspoon ground black pepper – ½ cup avocado oil – 2 pounds boneless skinless chicken thighs

– In a medium bowl, combine the lemon juice, zest, Dijon mustard, garlic, salt, and pepper.

– Whisk in the oil until the marinade emulsifies.

– Place the chicken in a shallow dish and pour the marinade over it. – Allow to sit at room temperature for 15 minutes, or refrigerate for up to 4 hours.

– Preheat a grill to medium-high heat. (400° F to 450° F)

– Remove the chicken from the marinade.

– Oil the grill grates. Cook the chicken until it is lightly charred and the internal temperature reaches 160° F, about 4 to 5 minutes per side. – Let the chicken rest for 5 to 10 minutes before serving.
