What could be better than digging into a big ole pile of Keto Nachos with all your favorite toppings? Now you can enjoy this guilty-pleasure food but without any of the guilt. Just imagine low-carb chips topped with perfectly-seasoned ground beef, plenty of cheese, and anything else your heart desires. (I love adding sliced jalapeños, guacamole, and lime!)


– 1 tablespoon avocado oil – ¼ cup chopped onion – 1 teaspoon minced garlic – 8 ounces ground beef – 1 teaspoon chili powder – 1 teaspoon ground cumin – ½ teaspoon red pepper flakes – ¼ teaspoon chipotle chili powder – Salt and pepper to taste – 1 recipe keto chips – 1 cup cheddar cheese – Optional Toppings: radishes sliced olives, sliced jalapeño, cilantro, red onion, diced tomatoes, green onions, lime wedges, avocado, sour cream

– Heat oil in a large skillet over medium-high heat. Add the onion and cook for 5 minutes. Add the garlic and cook for 1 more minute.

– Add the beef to the pan, breaking it up with the back of a spoon.

– Cook for 5 minutes, stirring to continue to break up the meat. – Sprinkle with chili powder, cumin, red pepper flakes, chipotle chili powder, salt and pepper. Cook for another 4 minutes.

– Place the oven rack in the top position. Preheat the broiler to high.

– Line a baking sheet with parchment and arrange the chips on the pan. Spoon the beef mixture over the chips and sprinkle with cheese. – Cook for about 2 minutes, until the cheese is melted.

– Top with the desired toppings and serve immediately.
