Keto Potato Salad

– 1 large head cauliflower chopped into small florets (about 2 pounds) – 1 cup mayonnaise – 3 tablespoons apple cider vinegar – 1 teaspoon Swerve confectioners – 1 teaspoon celery salt – 8 ounces bacon cooked and crumbled – ⅓ cup finely chopped dill pickles – 2 stalks celery chopped – 2 hard-boiled eggs peeled and chopped (optional) – Salt and pepper to taste – ¼ cup fresh chives – ¼ teaspoon smoked paprika

Bring a large pot of salted water to a boil. Add the cauliflower and cook for 4 minutes. Drain and rinse with cold water. Drain again and transfer to a large bowl.
