– 1 head cauliflower – ⅓ cup mayonnaise – 1 tablespoon Dijon Mustard – Salt and Pepper – 2 tablespoons butter melted – ¼ cup fresh grated Parmesan – 1 tablespoon lemon juice – Salt and Pepper to taste

Preheat oven to 420 degrees. Cut cauliflower into florets and place in a large bowl. In a small bowl, whisk together the mayonnaise and Dijon Mustard. Season with salt and pepper.

Pour the mayonnaise over the cauliflower and toss to combine.

Spread in a single layer on a roasting pan or on an oven safe cooling rack sitting on a cookie sheet.

Cook for 25 to 30 minutes, stirring every 10 minutes, until tender.

Transfer to a bowl. Top with melted butter, Parmesan, lemon juice, salt, and pepper. Stir and serve warm.
