    Keto Roasted Cauliflower

    Get ready for dinner bliss because veggie sides don't get much better than this Keto Roasted Cauliflower! Cauliflower is covered in a punchy mayonnaise marinade, roasted to perfection and then drizzled with a mixture of butter, Parmesan cheese, and lemon juice. This one is impossible not to make over and over again.

    The first time I tasted roasted cauliflower, I couldn’t believe how good it was. Something so simple turned into pure magic!

    These days, it’s a regular on my table, but my version leans a little richer. Coated in mayo (trust me on this), it crisps beautifully and adds just enough flavor to make you wonder why you ever made it any other way.

    How to Make Oven Roasted Cauliflower

    Cut the cauliflower into florets and place in a bowl. Place the dressing ingredients in another bowl.

    Whisk the dressing ingredients together. Transfer to a sheet pan and roast.

    In a small bowl mix together the butter, Parmesan, lemon juice, salt and pepper.  Pour over the cauliflower and serve warm.

    Italian White Cauliflower is a supermarket staple.  It is sweet and mild and the best cauliflower for roasting.

    How do I store cauliflower?

    There is not need to take up precious crisper space for cauliflower - it does just as well on a shelf in the fridge.

    Keto Roasted Cauliflower

    Ingredients

    • 1 head cauliflower
    • ⅓ cup mayonnaise
    • 1 tablespoon Dijon Mustard
    • Salt and Pepper
    • 2 tablespoons butter melted
    • ¼ cup fresh grated Parmesan
    • 1 tablespoon lemon juice
    • Salt and Pepper to taste

    Instructions

    • Preheat oven to 420 degrees.
    • Cut cauliflower into florets and place in a large bowl.
    • In a small bowl, whisk together the mayonnaise and Dijon Mustard. Season with salt and pepper.
    • Pour the mayonnaise over the cauliflower and toss to combine.
    • Spread in a single layer on a roasting pan or on an oven safe cooling rack sitting on a cookie sheet.
    • Cook for 25 to 30 minutes, stirring every 10 minutes, until tender.
    • Transfer to a bowl. Top with melted butter, Parmesan, lemon juice, salt, and pepper. Stir and serve warm.

    Notes

    Can you roast cauliflower in advance?
    You can, but it tends to get mushy and is best when it it cooked fresh.  (Though leftovers are good for up to two days kept covered in the fridge.)
