    Get ready for dinner bliss because veggie sides don't get much better than this Keto Roasted Cauliflower! Cauliflower is covered in a punchy mayonnaise marinade, roasted to perfection and then drizzled with a mixture of butter, Parmesan cheese, and lemon juice. This one is impossible not to make over and over again.

    A mayo and Dijon coating lends a refreshingly vibrant bite to roasted cauliflower. You are going to love the buttery topping that has the perfect kick of acid from lemon juice, and the salty finish of Parmesan cheese.

    I was in my 20's the first time I had roasted cauliflower.

    My husband and I were having dinner at one of his clients home. I had never met either the husband or wife, and I was blown away by the wife's effortless entertaining style.

    She was about 20 years older than I was at the time (close to my age now), and I remember thinking - "Wow, someday I want to be able to make it look that effortless."

    I was a little skeptical when she threw a sheet pan of cauliflower in the oven to roast, but everything else she was making as we were all sipping wine in the kitchen looked so good that I didn't think much of it.

    Imagine my surprise when that simple roasted cauliflower stole the show at dinner!

    Since then, this humble veggie has made a regular appearance on my dinner table.

    It is always a great low carb side, but when I went keto I knew I had to find a way to make Roasted Cauliflower Keto Style!

    The solution to up the fat? Cooking it coated in mayo.

    If it sounds weird, stick with me here! You coat chicken with mayonnaise to cook it, so why not vegetables? It infuses a kick of flavor and helps with the browning. (Plus, it helps keep those macros in line!)

    The trick is to cook it on a roasting pan, on an oven-safe cooling rack sitting in a baking sheet. That way, any extra juices and drip below leaving you with crispy roasted cauliflower!

    How to Make Oven Roasted Cauliflower Keto Style!

    Step 1:  Preheat

    Preheat your oven to 420 degrees.

    Step 2:  Cut the cauliflower

    Split the head in half.  Use a knife to remove the central core, and discard the green leaves around the base.  Break into large changes with your hands and then use the tip of your knife to cut into florets.  Place the cauliflower in a large bowl.

    Step 3:  Whisk

    In a separate bowl, stir together the mayonnaise, Dijon mustard, salt, and pepper.

    Step 4:  Roast

    Spread the cauliflower in a single layer on a flat roasting pan.  Cook for 25 to 30 minutes, or until tender, stirring every 10 minutes. Transfer to a bowl

    Step 5: Dress

    In a small bowl mix together the butter, Parmesan, lemon juice, salt and pepper.  Pour over the cauliflower and serve warm.

    Is roasted cauliflower healthy?

    Absolutely!  It is full of vitamin C, fiber, and potassium and perfect for a low carb diet.

    Can you roast cauliflower in advance?

    You can, but it tends to get mushy and is best when it it cooked fresh.  (Though leftovers are good for up to two days kept covered in the fridge.)

    What is the best cauliflower for roasting?

    Italian White Cauliflower is a supermarket staple.  It is sweet and mild and the best cauliflower for roasting.

    How do I store cauliflower?

    There is not need to take up precious crisper space for cauliflower - it does just as well on a shelf in the fridge.

    Ingredients

    • 1 head cauliflower
    • ⅓ cup mayonnaise
    • 1 tablespoon Dijon Mustard
    • Salt and Pepper
    • 2 tablespoons butter melted
    • ¼ cup fresh grated Parmesan
    • 1 tablespoon lemon juice
    • Salt and Pepper to taste

    Instructions
