Keto Asparagus Fries

Appetizers are top on my list at most any restaurant, and I have a particular weakness for anything crispy and fried. These Keto Asparagus Fries scratch the itch for traditional fries while remaining low carb, keto, and gluten-free. They are the perfect beginning to a meal, and also makes a fabulous side. Don't forget the dip - Garlic Lemon Aioli, Blue Cheese, and Ranch are all good options to enjoy with this Crispy Air Fryer Asparagus.

Ingredients

– 1 pound asparagus trimmed (thick if possible) – Salt and pepper to taste – 1 cup Parmesan cheese – ¾ cup almond flour – ¼ teaspoon cayenne pepper – ¼ teaspoon baking powder – 4 eggs beaten – Oil spray I used avocado oil

– Meanwhile, combine 1 cup of Parmesan, almond flour, cayenne pepper and baking powder in a bowl. Season to taste with salt and pepper. (I use ¼ teaspoon each.)

– In a separate bowl, beat the egg.

– Dip the asparagus spears in the eggs, and then coat with the cheese mixture.

– Preheat your air fryer to 400 degrees.

– Arrange the asparagus in a single layer, cooking in batches if necessary. Spray well with oil. Cook for 5 minutes. 

– Flip, and respray. Cook for another 4 to 5 minutes, until the asparagus is tender.
