Keto Meatloaf Muffins are healthy, satisfying, and fun! They pack a lot of flavor without requiring too many ingredients. Perfect for meal prep, they make a great on-the-go lunch and are always a welcome addition to the dinner table.


– 2 pounds ground beef – ⅓ cup almond flour – 2 teaspoons sea salt – 1 teaspoon smoked paprika – 1 teaspoon onion powder – 1 teaspoon garlic powder – 2 eggs beaten – 2 teaspoons gelatin optional – 12 tablespoons keto bbq sauce or keto ketchup

– Preheat oven to 350° F. Spray a muffin pan with cooking spray. – In a large bowl, combine the ground beef, almond flour, salt, paprika, onion powder, and garlic powder.

– Beat the eggs together with the gelatin and allow to sit for 5 minutes. – Add the egg mixture to the meat mixture, and combine with your hands.

– Use an ice cream scoop to divide the mixture into your muffin tin. Press down with your hands. – Bake for 20 minutes.

– Remove from the oven and carefully blot away any excess fat with paper towels.

– Use a brush to spread the ketchup or bbq sauce on top of the muffins.

– Bake for another 10 minutes until the internal temperature reaches 160° F.

– Bake for 25 minutes. Turn the heat to broil and cook for another 3 to 4 minutes, until the top is browned and bubbling.
