Ingredients

– 2 pounds flank steak – 1 tablespoon avocado oil – ½ teaspoon sea salt – ½ teaspoon garlic powder – ¼ teaspoon fresh ground pepper – 8 ounces bacon cooked and crumbled – 2 ounces feta cheese crumbled – 1 cup baby spinach chopped

– Place steak in a large zip-top bag. Using a meat mallet, pound to ¼-inch thickness.

– Brush both sides of the steak with avocado oil. Mix the salt, garlic powder, and pepper in a small dish and sprinkle over the steak. Sprinkle the bacon and feta cheese and top then with the spinach.

– Starting at one of the long sides, roll the steak up tightly.

– Tie with kitchen string at 3-inch intervals.

– Bake for 10 minutes, or to the desired doneness.
