Ingredients

  • 1 cup unsweetened coconut
  • ½ cup pecans
  • ¾ cup creamy almond butter
  • ¼ cup sugar free maple syrup or keto-friendly sweetener of choice
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • cup pumpkin seeds

Instructions

  • In the bowl of a food processor, combine the coconut, pecans, almond butter, maple syrup, chia seeds, vanilla extract, and salt. Process until smooth, adding in a little water to help it come together if you used a powdered sweetener. Add pumpkin seeds and pulse until roughly chopped.
  • Using a small cookie scoop, scoop out the dough and then form into balls. Place on a parchment-lined baking sheet and cover. Chill for at least 30 minutes.
  • Storage
  • Store in a sealed container in the refrigerator for up to 1 week, or freeze for up to 3 months.
