Keto Avocado Salad

Looking for a refreshing, no-fuss dish that's satisfying? This vibrant 15-minute Arugula Avocado Salad is the perfect light lunch or easy side! With creamy avocados, crunchy red onion , and peppery arugula, it all comes together with a zesty lime dressing.  This salad will quickly become a weeknight go-to.

Ingredients

Dressing

Salad

  • 6 cups baby arugula
  • ½ red onion sliced
  • ½ cup cherry tomatoes halved
  • 1 large avocado peeled and diced

Instructions

  • In a glass jar or blender, combine the lime juice, olive oil, salt, and cayenne pepper.  Shake or process until combined.
  • In a large bowl, stir together the arugula, red onion, and cherry tomatoes.  Toss with half of the dressing.
  • Transfer to serving bowls and top with diced avocado.
  • Sprinkle with the remaining dressing and serve immediately.
