- 1 tablespoon avocado oil
- ¼ cup chopped onion
- 1 teaspoon minced garlic
- 8 ounces ground beef
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon red pepper flakes
- ¼ teaspoon chipotle chili powder
- Salt and pepper to taste
- 1 recipe keto chips
- 1 cup cheddar cheese
- Optional Toppings: radishes sliced olives, sliced jalapeño, cilantro, red onion, diced tomatoes, green onions, lime wedges, avocado, sour cream
Cook the Meat
Heat oil in a large skillet over medium-high heat. Add the onion and cook for 5 minutes. Add the garlic and cook for 1 more minute.
Add the beef to the pan, breaking it up with the back of a spoon.
Cook for 5 minutes, stirring to continue to break up the meat.
Sprinkle with chili powder, cumin, red pepper flakes, chipotle chili powder, salt and pepper. Cook for another 4 minutes.
Make the Nachos
Place the oven rack in the top position. Preheat the broiler to high.
Line a baking sheet with parchment and arrange the chips on the pan. Spoon the beef mixture over the chips and sprinkle with cheese.
Cook for about 2 minutes, until the cheese is melted.
Please note that nutritional information does not include the chips to allow you to adjust for what you use.
Storage
I don’t recommend storing Keto Nachos. The toppings will make the chips soggy, and nobody wants soggy nachos.
If you don’t think you’ll eat the full low carb nacho recipe, just store the ground beef and other topping separately. Then, the next time you’re craving nachos, you can add the toppings to the chips and throw everything straight in the oven!
