Keto Vanilla Chia Pudding

This keto chia pudding is creamy, filling, and lightly sweet. It’s one of those recipes that fuels your day without weighing you down. A cup of Greek yogurt in the base keeps it rich and creamy. Keep a few jars in your fridge, and all you have to do is add your favorite toppings. It is the perfect grab-and-go snack.

Ingredients

  • 1 cup unsweetened almond milk
  • 3 tablespoons allulose
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon sea salt
  • 1 cup plain Greek yogurt
  • 3 tablespoons chia seeds

Instructions

  • Whisk the almond milk, allulose, vanilla, and salt until the sweetener dissolves.
  • Whisk in the Greek yogurt until it is smooth.
  • Stir in the chia seeds. Rest for 10 minutes, then whisk hard again for a few seconds to break up clumps as the seeds swell.
  • Divide into 4 jars or dishes. Chill for at least 4 hours, ideally overnight.
  • Add desired toppings and serve.
