I did a little happy dance the first time I tasted these Keto Blueberry Chaffles, and I think you will too! These beauties are something to swoon over. Does it get any better than enjoying your favorite flavors while staying on track with your goals? I think not! I like these drizzled in keto-friendly syrup, but they are also fabulous with just butter.

Y'all, it is official.

I am chaffle OBSESSED!

If you are online much at all, no doubt you have seen and heard about the latest viral obsession that is sweeping through the low carb community.

If not, allow me to introduce you to Chaffles!

What's a chaffle? It is a waffle made of egg and cheese!

I know - it sounds a little crazy. I will be the first to admit that I was skeptical when I first heard of it.

But people everywhere were raving about how delicious and versatile they were for both sweet and savory applications, and I couldn't resist giving it a try.

I first made one early one Saturday morning about a month ago.

Love. At. First. Bite.

I couldn't believe how much I loved them - it is like the missing link to my low carb diet success.

Since then, I've had one pretty much every day.

I think you will agree that these Blueberry Chaffles are something special! Not quite like the ones mom used to make but drizzled in a low carb syrup pretty darn close!

I think you will agree that this is breakfast bliss.

How to Make Blueberry Chaffles

1 First, preheat your waffle iron. DO NOT SKIP THIS STEP! While the waffle iron is heating, beat your egg in a small bowl and add the mozzarella cheese, almond flour, Swerve, cinnamon, and vanilla.

2 Next, stir everything together well. Divide the mixture in half using a spoon to "cut" down the middle of the mixture. (This works best in a flatter bowl.)

3 After that, spread half of the mixture in your waffle iron and top with half of the berries. Cook for 5 to 7 minutes, until golden brown.

Frequently Asked Questions

What are chaffles?

Chaffles are taking the keto-community by storm! Made in a waffle iron, chaffles consists of eggs and shredded cheese. Many people, myself included, like to add in almond flour. But that is just the basic chaffle recipe. From there, the options are limitless! It is a great place for even the most novice cook to get creative.

Do chaffles taste like cheese and eggs?

If you use just eggs and cheese, you will get the taste of eggs and cheese. Some people don't mind this! But to me, I much prefer chaffles with added seasonings, and variations.

Are blueberries keto-friendly?

Although most fruits are off-limits in a keto diet, avocados and berries are the exceptions. Raspberries, strawberries, and blackberries are more keto-friendly than blueberries because they have fewer net carbs per cup. Enjoy blueberries in moderation! In this case, a tablespoon can easily fit into your macros.

What sweeteners work in Keto Blueberry Chaffles?

This recipe isn't particularly fussy, so feel free to use whatever sweeteners you want. I used Swerve, but monk fruit or my latest obsession allulose would work great too! I don't have much experience with stevia, but I am sure that would work also.

What kind of maple syrup can I use on keto?

I am a big fan of Choc Zero products, as well a Lakanto.

Does it matter what waffle iron I use?

For the most success and ease, I recommend investing in the super-affordable Dash Mini Maker. BUT, I have made chaffles in my traditional waffle maker, and they came out great. I prefer the thinness that the dash offers, and also that a recipe makes two chaffles that perfect for sandwiches. (Not an issue with this recipe, but I am obsessed with making chaffles sandwiches.)

How long should I cook my chaffles?

I have found with the Dash Mini, cooking for 5 to 7 minutes is more. Don't use the light as a guide; instead, watch the steam and check them when the steam has dramatically reduced or stopped altogether. I am always tempted to take them off too early. But - you will be richly rewarded with a crispy chaffle for your patience.

Tips & Tricks

  • If you are using the Dash Mini, the light will go off indicating that it is ready before it is actually ready. For best results, wait until the steam has subsided.
  • For best results, allow the chaffles to cool slightly before serving.

Variations for This Recipe

  • Add 2 tablespoons full-fat ricotta cheese and 1 teaspoon grated lemon zest.
  • Add 3/4 teaspoon baking powder.
  • Use 1/2 tablespoon coconut flour in place of the almond flour.
  • Add 1/2 teaspoon banana extract.

Keto Blueberry Chaffles

Equipment

  • Waffle Iron (Dash Mini is recommended)

Ingredients

  • 1 egg beaten
  • 1/2 cup shredded mozzarella cheese (I like finely shredded but I have used both just fine.)
  • 1 tablespoon almond flour optional
  • 1 tablespoon swerve
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons frozen blueberries

Instructions

  • Preheat your waffle iron.
  • Crack the egg in a small bowl and beat.
  • Stir in the mozzarella cheese, almond flour, Swerve cinnamon, and vanilla.
  • If using a dash-mini, divide the mixture in two. (I use a shallow bowl and draw a line down the middle with a fork.)
  • Spread half of the mixture in your waffle iron, and top with half of the berries. Cook for 5 to 7 minutes, until golden brown.
  • If you are using a regular waffle iron, cook all the mixture at once for about 10 minutes, or until golden brown. (Cooking time will vary by the maker.)
  • Repeat with the remaining mixture.
  • Allow to cool slightly, and serve with butter and keto-friendly maple syrup.
