    Comfort food doesn't get any better than this Keto Beef Stroganoff. It is a filling dish on its own and is great served over mashed cauliflower, cauliflower rice, zoodles, or cabbage noodles. Hearty recipes like this one are the most requested meals in our home - and I think you will agree that this one-pot meal is a keeper.

    If you love hearty meals, it doesn't get much better than this Low Carb Beef Stroganoff!

    Beef Stroganoff is something that most of us grew up eating, and something is comforting about returning to meals from childhood.

    Of course, the kind I ate as a child is one that I begged my mom to buy in a box. 

    If you grew up on the boxed stuff, you would be happy to know that it can't hold a candle to this Keto Stroganoff. It is packed with flavor and so rich and creamy.

    This is a one-pot keto-friendly dish that is perfect for meal prep, and I think you will agree that the mushroom, beef, and sour cream combo is a winner.

    Variations for Keto Stroganoff

    • Add in 1 tablespoon of cooking sherry.
    • For a richer dish, add ⅓ cup heavy cream when you add the broth
    • Add ½ teaspoon lemon juice when you add the sour cream for a bright pop of flavor.
    • Add 2 tablespoons coconut aminos.
    • I think that the sauce is thick enough, but if you prefer a thicker sauce, you can add in ¼ to ½ teaspoon of xanthan gum. I recommend you thicken the sauce by adding ¼ teaspoon at a time because it is very easy to overdo it with xanthan gum.
    • If you are using a tougher cut of meat and would like it to be more tender, feel free to simmer it longer.

    What To Serve With Low Carb Stroganoff

    There are a lot of good options, including:

    • Mashed Cauliflower
    • Shirataki Pasta is a low carb non-GMO noodle alternative that many people love. They are made from the fiber from the konjac plant root that has been mixed with water.
    • Palmini Low Carb Pasta is a fun alternative that I first learned about on Shark Tank. It is made from hearts of palm. I don't think anything mimics egg noodles or any type of pasta exactly, but this is one of the closest substitutes I have found.
    • Zucchini Noodles
    • Cabbage Noodles
    • Spaghetti Squash

    How to Store Beef Stroganoff with Sour Cream

    Store leftovers in the fridge for up to four days.

    Can you freeze beef stroganoff?

    Yes, this recipe can be kept in the freezer for up to one month. Because it is a cream-based sauce, you can expect some separation, but it is still delicious.

    How to Reheat Beef Stroganoff

    I recommend reheating on the stove-top over medium-low heat until it is heated through.

    Is beef stroganoff keto?


    Most recipes use flour as thickeners and are severed over pasta. Therefore they are not appropriate for a low carb diet. This recipe is perfect for keto!

    What cut of meat is best for Low Carb Beef Stroganoff?


    The choice is mostly a matter of personal preference. I like to use sirloin steak, but flank steak and stew meat are also good options. Any cut will do - this recipe isn't fussy. You can even substitute ground beef if you like.

    Can this recipe be made ahead of time? Will it freeze?


    This recipe is excellent for meal prep! It keeps for three or for days in the refrigerator and can be frozen for up to one month. If you plan on freezing it, I recommend not adding the sour cream until when you reheat and serve. I have frozen it with the sour cream in it, but prefer it when added later.

    How many carbs does this recipe have?


    This recipe has just 2 net carbs per serving.

    Is sour cream keto?


    Yes! Sour cream works great on a keto diet provided you do not have a dairy sensitivity.

    How do you thicken beef stroganoff?


    I find the sauce to be the perfect texture, but if you would like a thicker sauce, feel free to add in ¼ to ½ teaspoon of xanthan gum.

    How to Make Keto Beef Stroganoff

    First, heat butter or ghee in a large skillet over medium-high heat. Season the steak with salt and pepper, and cook for 3 to 4 minutes, until browned. Remove from the pan.

    Next, add the onion, mushrooms, garlic, thyme, salt, and pepper to the pan. Cook for 5 minutes until the onion has softened.

    Reduce heat to medium, and add broth, cream cheese, coconut aminos, and Dijon mustard. Cook for 5 to 8 minutes, until thickened. Whisk well to help the cream cheese melt.

    Return the beef to the pan, and simmer for 5 more minutes.

    Remove from heat and stir in sour cream. Season with salt and pepper to taste.

    Serve over cauliflower rice, zucchini noodles, or mashed cauliflower.

    Keto Beef Stroganoff

    I have loved Beef Stroganoff since I was a child, and this keto-friendly version is my go-to dish for when I am craving a hearty meal. This is one of my favorite one pot keto meals. To lift up leftovers, I like to add a squeeze of lemon juice and a dollop of sour cream.

    Ingredients

    • 2 tablespoons butter or ghee

        Bragg's Liquid Aminos would be a keto-friendly option. If you eat soy, Tamari is another option. If you do soy and gluten, Soy Sauce is an alternative.

      My partner said at least 3x how great this stroganoff was while eating it another great meal you created there! We had it with celeriac fries. I added some xanthan gum to thicken the sauce as it didn’t go thicker by itself.

      Hi There
      I've noticed in some, not all, of the low carb or keto versions of beef stroganoff, they have a non stroganoff ingredient of cream cheese. What dairy is the cream cheese substituting for? The usual creamy ingredients used in stroganoff in addition to the sour cream is heavy cream, whipping cream or creme fraiche, even half and half, all practically no carbs at all. Any information would be appreciated. Thanks

        The cream cheese acts as a thickener. Traditional Beef Stroganoff typically has flour.

      Delicious! Husband loved it. Made half the recipe with 1 pound of grass fed stew meat. The sauce thickened up just fine. Wish I had put in a little bit of sherry. Next time. 🙂 Hubbie said wow...all of your keto meals are so good. I believe it's the expanded use of herbs and spices in low carb recipes.
