    Keto Chicken Kiev - Low Carb and Gluten Free

    If you like buttery chicken loaded with flavor, you will fall in love with this Keto Chicken Kiev. This decadent dish makes a welcome addition to your dinner routine and is perfect for serving for a special occasion.

    Even the kids routinely request that I add this to our meal plan.

    I love it when I can make low-carb and gluten-free meals that the whole family will eat. 

    Make it once, and you will be hooked!

    Note: While this recipe inspiration originated in the city of Kiev, as of this city now goes by the name of Kyiv. So while this is certainly far from a traditional recipe, perhaps a better name for it would be Keto Chicken Kyiv, as this is the preferred transliteration from Ukrainian.

    Ingredients for Making Low Carb Chicken Kiev

    • Butter:  I like using salted butter.  
    • Parsley:  Fresh is best if you have it. If you don’t, two teaspoons of dried parsley works.
    • Garlic: I recommend fresh minced garlic for the fullest of flavor.
    • Salt and pepper:  Adjust the amounts to your liking.
    • Chicken:  Chicken breast works best here because of the size and shape.
    • Almond Flour:  Finely ground almond flour will yield the best results.
    • Parmesan Cheese:  Grated fresh parmesan cheese is best. I prefer grating it so that the texture resembles almond flour. 
    • Cayenne Pepper:  This adds a kick of heat. Feel free to omit.

    Pro Tip

    Don’t skip the resting time at the end of cooking. The chicken will come up to the recommended internal temperature of 165° F during this time. Also, it will absorb more of the buttery goodness inside.

    Tools Needed to Make Chicken Kiev Keto

    • Meat Mallet
    • Small Bowl
    • Plastic Wrap
    • Baking Sheet or Air Fryer
    • Parchment Paper or Air Fryer Liner

    How to Make Keto Chicken Kiev

    First, start by making the herbed butter. To do this, combine the butter, garlic, and parsley in a small bowl. Sprinkle with the salt and pepper and stir to combine.

    Form into a log and wrap with waxed paper, plastic wrap, or parchment paper. Refrigerate for at least two hours. If you want to make this farther ahead than a few days, you can freeze the compound butter for up to three months.

    Next, pound the meat with a meat mallet until it is about ¼” thick.

    Place the chilled butter in the center of the chicken, wrap the chicken tightly from the long side, and tuck the ends in as you go.

    Secure with toothpicks, and wrap tightly with plastic wrap. Refrigerate for at least two hours.

    Place the beaten egg in one bowl and combine the almond flour, parmesan, and cayenne pepper in another.

    Dip the chicken in the egg and finally into the breading mixture.

    Air Fryer Keto Chicken Kiev

    Cook in a 350 ° F air fryer for about 20 minutes or until the chicken is golden brown and cooked through.

    Allow to rest before serving.

    Baked Keto Friendly Chicken Kiev

    Cook the chicken on a parchment-lined baking sheet in a 375° F oven for about 40 minutes until the chicken's internal temperature is 160° F.

    Allow the chicken to rest before serving.

    Chicken Kiev has always been a favorite around our house. This keto-friendly version is just as delicious as the original. This recipe requires some advanced planning. I promise you will be rewarded for your efforts.

    Ingredients

    • 1 stick salted butter softened
    • 2 tablespoon chopped fresh parsley
    • 1 teaspoon minced garlic
    • 1 teaspoon sea salt
    • ½ teaspoon ground black pepper
    • 2 pounds boneless chicken breast
    • ¾ cup finely ground almond flour
    • ¾ cup grated Parmesan cheese
    • ⅛ teaspoon cayenne pepper
    • 2 eggs beaten

    Instructions

    • In a medium bowl, combine butter, parsley, garlic, salt, and pepper. Form into a log and wrap with parchment paper, waxed paper, or plastic wrap. Refrigerate for at least 2 hours, until firm.
    • Place the chicken breast in a zip-top bag and pound with a meat mallet until the chicken is ¼” thick.
    • Place butter in the center of each chicken breast and wrap tightly from the long side, tucking in the short sides as you go. Secure with toothpicks. Wrap tightly with plastic wrap and refrigerate at least 2 hours or overnight.
    • In a shallow bowl, combine almond flour, parmesan, and cayenne pepper.
    • In another bowl, beat the eggs.
    • Coat the chicken in the eggs, and then dip in the almond flour mixture, using your fingers to press to coating into the chicken.

    Air Fried Keto Chicken Kiev

    • Set your air fryer to 350 degrees. If desired, use an air fryer liner to avoid sticking. Spray the chicken with oil, cook for 20 minutes or until an instant-read thermometer registers 160° F.
    • Allow to rest for 5 to 10 minutes before serving.

    Baked Chicken Kiev

    • Preheat the oven to 375 ° F. Line a baking sheet with parchment paper and spray with cooking spray.
    • Place the chicken on the baking sheet and spray with oil.
    • Baked for 40 to 45 minutes until an instant-read thermometer registers 160° F.
    • Allow to rest for 5 to 10 minutes before serving.
