Ingredients for Making Low Carb Chicken Kiev
- Butter: I like using salted butter.
- Parsley: Fresh is best if you have it. If you don’t, two teaspoons of dried parsley works.
- Garlic: I recommend fresh minced garlic for the fullest of flavor.
- Salt and pepper: Adjust the amounts to your liking.
- Chicken: Chicken breast works best here because of the size and shape.
- Almond Flour: Finely ground almond flour will yield the best results.
- Parmesan Cheese: Grated fresh parmesan cheese is best. I prefer grating it so that the texture resembles almond flour.
- Cayenne Pepper: This adds a kick of heat. Feel free to omit.
Pro Tip
Don’t skip the resting time at the end of cooking. The chicken will come up to the recommended internal temperature of 165° F during this time. Also, it will absorb more of the buttery goodness inside.

First, start by making the herbed butter. To do this, combine the butter, garlic, and parsley in a small bowl. Sprinkle with the salt and pepper and stir to combine.
Form into a log and wrap with waxed paper, plastic wrap, or parchment paper. Refrigerate for at least two hours. If you want to make this farther ahead than a few days, you can freeze the compound butter for up to three months.
Next, pound the meat with a meat mallet until it is about ¼” thick.
Place the chilled butter in the center of the chicken, wrap the chicken tightly from the long side, and tuck the ends in as you go.
Secure with toothpicks, and wrap tightly with plastic wrap. Refrigerate for at least two hours.
Place the beaten egg in one bowl and combine the almond flour, parmesan, and cayenne pepper in another.
Dip the chicken in the egg and finally into the breading mixture.
