When I want a no-fuss, big-flavor dinner that feels like a hug in a bowl, this Keto Beef Stroganoff is what I reach for. It’s got that classic creamy mushroom thing going on, but without the carby baggage. Made with thinly sliced steak, this one-skillet meal brings all the cozy without the crash. We pile it over cauliflower mash, toss it on some cabbage noodles, or keep it simple with a spoon.

If you love hearty meals, it doesn't get much better than this Low Carb Beef Stroganoff!
Beef Stroganoff is something that most of us grew up eating, and something is comforting about returning to meals from childhood.
This is a one-pot, keto-friendly dish perfect for meal prep, and I think you will agree that the mushroom, beef, and sour cream combo is a winner.
Serve this with Mashed Cauliflower, Shirataki Pasta, Palmini Low Carb Pasta or Cabbage Noodles.
Ingredient Notes
- Sirloin Steak: I like to use sirloin steak, but flank steak and stew meat are also good options. Any cut will do - this recipe isn't fussy. You can even substitute ground beef if you like. (If you want to go that route, check out my recipe for Keto Meatball Stroganoff.)
- Minced Garlic: Use fresh or frozen for best flavor. Jarred can be used in a pinch, but typically doesn't have as much flavor.
- Cream Cheese & Sour Cream: Make sure you use full-fat.
- Coconut Aminos: Adds a slightly sweet, umami flavor. If you aren't strict keto, gluten-free tamari or soy sauce are great alternatives.
Mix it Up
- Add in 1 tablespoon of cooking sherry.
- For a richer dish, add ⅓ cup heavy cream when you add the broth.
- Add ½ teaspoon lemon juice when you add the sour cream for a bright pop of flavor.
- I think that the sauce is thick enough, but if you prefer a thicker sauce, you can add in ¼ to ½ teaspoon of xanthan gum. I recommend you thicken the sauce by adding ¼ teaspoon at a time because it is very easy to overdo it with xanthan gum.
How to Make Keto Beef Stroganoff
First, heat butter or ghee in a large skillet over medium-high heat. Season the steak with salt and pepper, and cook for 3 to 4 minutes, until browned. Remove from the pan.


Next, add the onion, mushrooms, garlic, thyme, salt, and pepper to the pan. Cook for 5 minutes until the onion has softened.



Reduce the heat to medium, and add broth, cream cheese, coconut aminos, and Dijon mustard. Cook for 5 to 8 minutes, until thickened. Whisk well to help the cream cheese melt.
Return the beef to the pan, and simmer for 5 more minutes.
Remove from heat and stir in sour cream. Season with salt and pepper to taste.
Finish with a garnish of thyme or parsley if you like. Serve over cauliflower rice, zucchini noodles, or mashed cauliflower, being sure to drizzle that creamy sauce over your side.

Creamy Keto Beef Stroganoff
Ingredients
- 2 tablespoons butter or ghee
- 2 pounds sirloin steak cut into cubes (you can also use beef stew meat)
- ½ diced onion
- 6 ounces white mushrooms sliced
- 1 teaspoon minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon sea salt
- ½ teaspoon fresh ground pepper
- 1 ½ cups beef broth
- 6 ounces cream cheese cubed
- 1 tablespoon coconut aminos
- 1 tablespoon Dijon mustard
- 4 ounces sour cream

Bragg's Liquid Aminos would be a keto-friendly option. If you eat soy, Tamari is another option. If you do soy and gluten, Soy Sauce is an alternative.

I've noticed in some, not all, of the low carb or keto versions of beef stroganoff, they have a non stroganoff ingredient of cream cheese. What dairy is the cream cheese substituting for? The usual creamy ingredients used in stroganoff in addition to the sour cream is heavy cream, whipping cream or creme fraiche, even half and half, all practically no carbs at all. Any information would be appreciated. Thanks

The cream cheese acts as a thickener. Traditional Beef Stroganoff typically has flour.

Delicious! Husband loved it. Made half the recipe with 1 pound of grass fed stew meat. The sauce thickened up just fine. Wish I had put in a little bit of sherry. Man... this really hit the spot. I added additional fresh parsley, 16 oz mushrooms (we love mushrooms), all 8 oz cream cheese and some Worcestershire Sauce. Served it over Palmini, and it was great! So happy to find a low carb stroganoff that tastes as good as the full carb version!

I was amazed at how delicious this was. I avoid starches, since they make me very hungry, but had never imagined cream cheese in a beef stroganoff recipe - it was excellent. I did add a few more spices (tarragon, Colman's mustard, some dried shallots, and Worcestershire sauce), put in a bit more sherry, and served it over spinach.

The taste was delicious. I had to add a small amount of guar gum to thicken it up and I also like Worcestershire sauce better than coconut aminos. It actually had 1 less carb and 5 less calories plus it wasn't on the sweet side like the coconut aminos. I used thin sliced cabbage for the noodles for mine.
