I’ve tested this keto French toast recipe with at least five different kinds of bread. Some keto breads soak up the custard beautifully and hold their shape. Others? They fall apart halfway through flipping or have a cardboard-like texture. Sola is my favorite store-bought brand. I get it at Whole Foods or Walmart.

Keto French Toast
Ingredients
- 3 large eggs
- ½ cup unsweetened almond milk
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
- ¼ teaspoon ground cinnamon
- Pinch of salt
- 6 slices keto friendly bread
- 2 tablespoons unsalted butter
- For serving: butter keto-maple syrup, keto confectioner’s sugar, pecans
Instructions
- In a large mixing bowl, whisk together the eggs, almond milk, heavy cream, vanilla, cinnamon, and salt.
- Place the bread in a shallow baking dish.
- Pour the custard mixture over the bread, and soak for 5 minutes. Flip, and soak another 5 minutes.
- Preheat a large skillet over medium heat. Add 1 tablespoon of the butter.
- Cook 2 pieces of the bread until golden brown, about 3 to 5 minutes per side. Add the remaining butter, and cook the remaining bread slices.
- Serve warm. Sprinkle with pecans and confectioner’s sugar and drizzle with sugar-free syrup if desired.
