    This Keto French Toast has golden edges, custardy centers, and a warm cinnamon-vanilla aroma that makes it taste like the real thing.  This easy recipe feels indulgent and a little special, but still works perfectly in your low-carb morning.

    One bite of this keto French toast recipe you will wonder why you ever bothered with the carb-loaded version. You still get all that classic French toast flavor, just without the carb crash an hour later.

    Let’s Talk Ingredients

    With French toast with keto bread, it is the bread that will make or break you.

    I’ve tested this keto French toast recipe with at least five different kinds of bread. Some keto breads soak up the custard beautifully and hold their shape. Others? They fall apart halfway through flipping or have a cardboard-like texture.  Sola is my favorite store-bought brand. I get it at Whole Foods or Walmart.

    I’ve found that slightly stale keto bread French toast actually works better than super-fresh slices. If your bread feels very soft, let it sit out for a bit before soaking.

    The combo of heavy cream and unsweetened almond milk is intentional. I tested this with all almond milk once, and it was fine, but not lush. All cream was a little too rich and almost dense.

    Step-by-Step Instructions

    In a large bowl, whisk the wet ingredients and cinnamon.

    Arrange low carb bread in a shallow dish. Pour the egg mixture over the bread. Soak 5 minutes. Flip and soak 5 minutes more.

    Cook until golden brown. Keep warm while cooking the remaining slices.

    Tips & Tricks for Perfect Keto French Toast

    • Control the soak time. Thinner slices need less time, or your keto French toast recipe can turn mushy in the center.
    • Cook over medium, not high heat. Low-carb French toast browns quickly. Too much heat leaves the outside dark and the inside undercooked.
    • Make sure that the first side is set before you try flipping. Moving it too early is the main reason slices tear apart.

    Ingredients

    • 3 large eggs
    • ½ cup unsweetened almond milk
    • ¼ cup heavy cream
    • 1 teaspoon vanilla extract
    • ¼ teaspoon ground cinnamon
    • Pinch of salt
    • 6 slices keto friendly bread
    • 2 tablespoons unsalted butter
    • For serving: butter keto-maple syrup, keto confectioner’s sugar, pecans

    Instructions

    • In a large mixing bowl, whisk together the eggs, almond milk, heavy cream, vanilla, cinnamon, and salt.
    • Place the bread in a shallow baking dish.
    • Pour the custard mixture over the bread, and soak for 5 minutes.  Flip, and soak another 5 minutes.
    • Preheat a large skillet over medium heat.  Add 1 tablespoon of the butter.
    • Cook 2 pieces of the bread until golden brown, about 3 to 5 minutes per side.  Add the remaining butter, and cook the remaining bread slices.
    • Serve warm.  Sprinkle with pecans and confectioner’s sugar and drizzle with sugar-free syrup if desired.

    Notes

    Leftovers can be stored in the fridge for up to three days.  Reheat in a skillet, toaster oven, or microwave.
