    Rich and Creamy Keto Vanilla Ice Cream

    You will be blown away by how crazy-good this Keto Vanilla Ice Cream is. It is quite possibly the best vanilla ice cream I have ever tasted. Everyone - even those not following a sugar-free or low-carb diet - will love this deliciously creamy treat.

    Prepare to Swoon Over This Scoopable Keto Ice Cream Recipe!

    One of my favorite things about creating recipes is that now and then, one will make me positively giddy because it is so good. Guys, this Keto Vanilla Ice Cream is one of those!

    It didn't come easy.

    It took me four tries to get it right. I had to try different sweeteners and different amounts of xanthan gum and oil to get a sugar-free ice cream that I could scoop straight from the freezer.

    Swerve, my usual go-to sweetener, made it rock hard.

    Adding vodka didn't help. (Some resources suggested alcohol would help the texture, but it wasn't enough to overcome the crystallization the erythritol caused.)

    Too much xanthan gum made it so thick you had to coax it out of the ice cream maker.

    You get the idea.

    In the end, it was all worth it.

    Allow me to present to you ice cream perfection.

    With just one net carb per serving, this deliciousness is a keto dream come true.

    Frequently Asked Questions

    Can you have ice cream on a keto diet?

    Most ice cream has sugar in it, which is a hard no when you are on keto. Recently, there have been some keto-friendly ice cream brands to come onto the market.

    Halo Top is fantastic if you are on low-carb, but it is hard to fit the carbs into your macros when you are on keto. My favorite keto-friendly ice cream brand is Rebel. It is good - but not as good as homemade!

    What is allulose sweetener?

    Allulose is a zero net carb sweetener that has the taste and texture of sugar, minus the calories and carbs.

    The carbohydrates in allulose not metabolized by the body, and it does not raise blood sugar levels. (In fact, animal studies show that it may lower blood sugar.) I tested this myself, and it did not raise my blood sugar levels or kick me out of ketosis. See how it works for you.

    Can I make this recipe dairy-free?

    Yes! Canned full fat coconut milk will work in place of the heavy cream. You can also use unsweetened almond milk, but the results will not be quite as rich.

    What other sweeteners work in this recipe?

    Xylitol is another sweetener that works well for keto ice cream. I don't recommend it if you have animals, because it can be toxic to them.

    Additionally, some people report that it causes gastrointestinal distress. (But others use it with no issues, so I recommend starting small and seeing if it works for you.)

    How to Make This Keto Vanilla Ice Cream Recipe

    First, you want to bring the heavy whipping cream, allulose, and sea salt to a simmer over medium-high heat. Whip constantly until the sweetener dissolves and the mixture coats the back of a spoon.

    Remove from heat and whisk in the xanthan gum, MCT oil, and vanilla.

    Next, transfer the ice cream base to a pitcher or bowl and refrigerate until cold. (I do it overnight.)

    Pour the mixture into your ice cream maker.

    Process according to the manufacturer's instructions.

    It will initially be more like a soft serve. If you want it to be harder, freeze for about two hours in a freezer-safe container. It will remain delightfully scoopable.

    Variations for This Recipe

    • For a more intense vanilla flavor, add 1 teaspoon vanilla powder or vanilla bean paste. You can also use 1 vanilla bean, split lengthwise and scraped.
    • Add ½ teaspoon almond extract or peppermint extract.
    • Add ½ cup Lily's Chocolate Chips to your ice cream maker as the ice cream starts to firm up.
    • Have fun with the add ins! You can add chopped keto chocolate chip cookies, crumbled keto brownies, or even keto-friendly peanut butter cups.

    Equipment

    • Ice Cream Maker

    Ingredients

    • 3 cups heavy cream
    • ¾ cup Allulose Sweetener
    • ⅛ teaspoon sea salt
    • ¼ cup MCT oil or melted coconut oil
    • 2 teaspoons vanilla extract
    • ⅛ teaspoon xanthan gum

    Instructions

    • Bring heavy cream, allulose, and sea salt to a simmer over medium-high heat. Cook, constantly whisking, until the sweetener is dissolved.
    • Remove from heat and stir in MCT oil, vanilla extract, and xanthan gum.
    • Chill completely in the refrigerator and process according to the ice cream makers manufacturers instructions.
    • It will initially be like soft-serve. If you prefer it firmer, place it in a freezer-safe dish and cover. Freeze for 2 hours.

    Please note that the carbohydrate count does not include Allulose, which has zero net carbs.

      I am glad you have come up with a sugar free vanilla ice cream! I am lactose intolerant. Is there a way to use lactose free full fat milk or something else that would imitate heavy cream without the lactose?

      I loved your recipe. Yummy. My question is about the volume. It really did not increase. I used my 1.5 qt Cuisinart and ended up running it for an hour because the volume never seemed to increase. Is that normal for your recipe?

        I haven't tried it but I imagine that it would work. Just make sure that you use the allulose and not another sweetener. Otherwise I am afraid it would be rock hard.

      Perfect Keto Ice Cream. I did macros and didn't count alluose, but the counts were much different. I noticed you had 12 servings listed. How much is each serving? 1/2 cup?
