Years ago, when we lived in Scottsdale, time to myself was extremely scarce.
Skye was a baby, and the boys were about seven and eight. Life was fun but exhausting.
As an introvert, I crave alone time and every now, and then I'd reach my breaking point.
When this happend, I'd turn baby and kid duty over to my husband and get out of the house for an hour or two.
One of my favorite places to go was this little restaurant in a strip mall nearby. It was casual, but most definitely did not have a kid-friendly vibe.
What it did have was these delicious gourmet tacos made with a spicy shredded beef that had been cooked low and slow.
I fell in love with those tacos because of the meat, which was so dang tender and flavorful.
This Keto Slow Cooker Beef tips its had to that meat with the same fall-apart delicious tenderness. I love how the meat shreds with the slightest pressure from my fork!
This recipe does have a kick of heat, so feel free to dial it down if that isn't your thing. (Or dial it up if you like.)
How to Make Keto Slow Cooker Beef

1 First, gather your ingredients. You will need: beef chuck roast, avocado oil, onion, poblano chili pepper, chipotle chili pepper, garlic, cumin, coriander, salt, cayenne pepper, tomato sauce, apple cider vinegar, and brown sugar substitute.

2 Season the meat with salt and pepper. Heat oil to medium-high heat either on the stovetop or using the saute function of your slow cooker. Add onion, poblano chili pepper, and chipotle chili pepper. Cook, stirring often, for 6 minute

3 Add the garlic, cumin, coriander, salt, and cayenne pepper and cook for another minute. Add the tomato sauce, apple cider vinegar, and brown sugar substitute.

4 Stir, and add the meat. Cover and cook on low for 6 to 8 hours. Allow to cool slightly, and then use forks to shred.

I use Beef chuck which comes from the shoulder and has an intense beefy flavor and a good bit of fat. I like to use a boneless cut because it makes things easy. Really any cut of meat will work, but I’d save more expensive cuts for other uses. Brisket, bottom round, and flank steak are also good options here.
Can You Freeze this Meat?
Yes! Cool it completely in the refrigerator. Freeze it in individual portions in the cooking liquid for up to three months.

- To Freeze This Recipe - Allow the meat to cool and divide the meat, along with the cooking liquid, into large zip-top plastic freezer bags. Seal and freeze for up to 6 months. Don’t forget to label it! To use, thaw in the refrigerator overnight and reheat until the internal temperature reaches 155 degrees. You can do this on the stovetop or in about 2 hours in a slow cooker on high.
- The chipotle chili pepper makes this dish a touch spicy. If heat isn't your thing, or if you are making this for children, you may want to use half of omit it.
- Allow the meat to cool completely in the cooking liquid. It will reabsorb some of the liquid and you will end up with juicier meat.
- Store the meat in the cooking liquid as well. The taste and texture will actually improve over time! This is actually one of those rare recipes that it is best to make a day or two before serving.
