Allow me to introduce you to one of my all-time favorite creations. I am passionate about Reubens, and this easy to make Keto Reuben Sandwich is my idea of perfection. When you combine a crispy buttery chaffle, melted cheese, corned beef, sauerkraut, and a delicious sauce, you have got mealtime bliss.

Since going low carb, sandwiches are among the things that I miss the most. That is, I missed them until I started making chaffles.

I am in love with this Keto Reuben Sandwich so much! I would have it on the menu every week if I could.

This is a big sandwich. I have never been able to eat a whole one. I save it and reheat the uneaten half in my air fryer for another meal.

If you are looking for more chaffle inspiration, try my Blueberry Chaffles, Keto Avocado Toast and Peanut Butter Chaffles. And if you are new to chaffles, check out my guide on How to Make Chaffles.

    Tips & Tricks

    • I recommend using a skewer or toothpicks to secure the sandwich when you are cooking it.
    • Alternatively, you can butter the outside of the chaffles and cook the sandwiches in the air fryer for about 5 minutes at 400 degrees.
    • If you don't want to make chaffles, cloud bread is also a great option.

How to Make a Keto Reuben Sandwich

A white bowl with grated cheese, and an egg.
Combine the chaffle ingredients in a bowl.
A mini waffle maker filled with a keto reuben chaffle mixture of shredded cheese and egg sits open on a light countertop next to a white plate with cheese remnants and a fork.
Cook in the Dash Mini for about 6 minutes. Repeat with the second half of the mixture.
A white plate with three separate portions—chopped pickles, a dollop of ketchup, and a dollop of mayonnaise—perfect accompaniments for building your own keto Reuben sandwich, placed next to a white cloth.
Combine mayonnaise, diced pickles, and sugar-free ketchup in a small bowl.
An open-faced keto reuben sandwich being built on a white plate, with slices of corned beef on one half and creamy dressing with chopped pickles and black pepper on the other, garnished with fresh parsley.
Spread the sauce on one chaffle and place half of the meat on another.
An open-faced keto reuben sandwich on a white plate with rye bread, creamy sauce with chopped pickles and black pepper, pastrami, Swiss cheese slices, and a parsley garnish.
Top the corned beef with cheese.
An open-faced keto reuben sandwich on a white plate with one half topped with creamy sauce and pepper, and the other half layered with sliced meat, cheese, and sauerkraut. Fresh parsley is placed beside the sandwich.
Finally, add the sauerkraut. Melt butter over medium heat in a large skillet. Cook the sandwiches for 4 minutes. Flip and cook for another 4 minutes, or until the cheese melts.

    Frequently Asked Questions

Sauerkraut isn’t my thing. What can I use?

I would suggest using a good keto-friendly coleslaw. Only then, technically your sandwich will not be a Reuben. It's now a Rachel!

What kind of ketchup can I use on keto?

I often make my own keto ketchup. When I don't have time for that, this is the brand I use.

I definitely have to try this!!! Every recipe of yours that I have tried has been a hit...I apologize for not leaving comments on a regular basis (and for that reason I am leaving this a 5-star review even though I have not tried this!!) I am thinking of possibly adding some caraway seeds to the chaffles for more of a rye bread effect...what do you think? 🙂

Just a FYI. Try using shredded Swiss instead of Mozzarella. With the caraway seeds and the swiss in the chaffle it is really good!

Just to be sure, you nutrition numbers in the recipe are based on eating both of the chaffles that this makes, correct?

Incredible yum factor! CarbManager has it calculating as 6.6 carbs with my ingredients, which did not include sauerkraut. Worth every carb and every bite!! Amazing!
