Can I use low-fat dairy?
You can, but I don't recommend it. Low-fat dairy isn't appropriate for a keto diet, and doesn't taste as good.
Can I Use Store Bought Ranch Dressing?
Absolutely! Make sure you read the labels to avoid hidden sugars. This is my go to brand.
Variations
- You can substitute broccoli florets for the spinach. I recommend blanching it first. To do this, bring a large pot of water to a boil. Fill a bowl with ice water. Cook the broccoli for 90 seconds and drain. Immediately plunge the broccoli into the bowl of water. Drain and continue with the recipe as directed.
- Cauliflower florets are another option. Follow the same directions as you would use for spinach.

Creamy Keto Chicken Bacon Ranch Casserole
Equipment
- 8 x 8 casserole dish
Ingredients
- 1 tablespoon olive oil
- ½ cup diced onion
- 5 ounces fresh spinach chopped fine
- 1 ½ cups cooked chicken breast or thighs cubed
- 8 ounces crispy bacon cooked and chopped
- 8 ounces cream cheese softened
- ⅔ cup Keto Ranch Dressing
- ¼ teaspoon cayenne pepper
- 1 cup mozzarella cheese
- 1 cup sharp cheddar cheese
- For serving: bacon crumbles ranch dressing, parsley
Instructions
- Preheat oven to 350 degrees.
- Heat a oil in a skillet to medium heat and add the onion.
- Cook for 5 minutes, and add the spinach.
- Cook until the spinach wilts and remove from the heat.
- Combine the onion, spinach, chicken, and bacon in a large bowl.
- Combine the cream cheese, ranch dressing, and cayenne pepper in the bowl of a food processor and process until smooth.
- Toss the mixture with the chicken until well combined and transfer to an 8 x8 baking dish.
- Top with cheese and bake for 30 minutes.
- Drizzle ranch dressing on the top of the casserole. Sprinkle with bacon crumbles and parsley and serve.

So I modified this to put it in the crock pot and it was SOOO good! I added chicken broth and some butter for more fat. I also just used a ranch packet instead of keto ranch! Delicious!!

Just made this recipe today. I chopped up three carrots and added that to the sauteed vegetables. The added carrots were okay, but definitely didn't detract from the amazing flavor! It's so amazing! I will definitely be adding this to my menu rotation.
