    When you need a keto-friendly pie crust that is simple and delicious, it doesn't get any better than this Pecan Crust. With 5 simple ingredients, this low carb no-bake crust is perfect for any skill level of cook. It is perfect for making recipes like Keto Cheesecake.

    A great dessert can elevate any occasion, but just because it tastes great doesn't been it has to take a long time to make.

    Case in point - this Pecan Crust. It is the easiest crust ever and the perfect way to make your pie or cheesecake recipe super-simple to make.

    Give it a try, and I think you will agree - this pie crust is easy and delicious.

    Ingredients

    • Pecan Halves - I like the flavor and texture of pecan halves, but since you are grinding them, chopped pecans work too. Just remember to toast!
    • Unsweetened Shredded Coconut: Make sure you read the label and ensure that you are buying unsweetened coconut.
    • Sweetener - I use Swerve confectioners or allulose, but any powdered sugar sweetener works here.
    • Salt: My go-to is fine sea salt. Kosher salt is also a great option.
    • Butter: I always use unsalted.

    Wendy's Tips & Tricks

    • Processing Tips: When processing the pecans and coconut, aim for a fine but not powdery consistency. You want small, even bits that will create a cohesive crust without being too dense.
    • Pressing the Crust: A measuring cup works well to press the crust into your pie plate or spring-form pan.  I have also used a drinking glass.
    • Adding Flavor: A pinch of cinnamon is a fun way to add flavor.
    • Storage Tips: If you are a planner, feel free to make and freeze this crust up to a month ahead. I like to wrap it in plastic wrap and then put it in a jumbo freezer bag to prevent freezer burn.

    • Common Mistakes to Avoid:
      • Over-processing: If you aren't careful, your pecans can turn into nut butter! Pulse in intervals and check the consistency frequently.
      • Under-toasting: Don't try to save time by skipping toasting the coconut and pecans. Toasting adds a lot of flavor.
      • Insufficient Pressing: Failing to press the crust firmly enough can cause it to crumble more than it should when serving.
    • Fixing a Crumbly Crust: If your crust isn't holding together, add a bit more melted butter, a tablespoon at a time, until the mixture holds together better.

    Toasting Pecans and Coconut

    • Toasting Pecans: Toast pecans in a preheated 325° F oven for between 7 to 10 minutes.
    • Toasting Coconut: Toast coconut for about 8 minutes in a 325° F oven, paying careful attention towards the end of the cooking time. The finer of a shred your coconut has the quicker that it will cook.

    How to Make Pecan Crust

    Making this no-bake pie crust couldn't be easier!

    First, start by combining your pecans, coconut, sweetener, and salt in the food processor.

    Process until fine.

    Add the butter, and continue to process until the mixture comes together.

    Grease a springform pan, and transfer the mixture to the bottom of the pan. Press it into the bottom and up the sides. Freeze until solid.

    • 1 ½ cups pecan halves toasted
    • ½ cup shredded unsweetened coconut toasted
    • 2 tablespoons Swerve confectioners

      Can you use the lakanto powdered instead of the swerve, and can you use all pecans if you don’t like coconut.

        The sweetener substitution will work just fine. I haven't tried it without coconut, but other people have and say it is good!
