    Keto Buffalo Chicken Casserole

    I fell in love with buffalo sauce years ago, and I’ll take any chance I can to build a meal around it. Keto Buffalo Chicken Casserole combines my favorite flavors in the confines of one dish. With chicken, cauliflower, cream cheese, cheddar cheese, blue cheese, and a subtle kick of heat, you have a meal that is creamy, cheesy, and so satisfying.

    You Are Going to Love This Keto Buffalo Chicken Casserole!

    It is no secret that I am a fan of all things buffalo. From chicken wings to cauliflower wings, shredded chicken, and dip, I think anything buffalo flavored rocks.

    Do you know what else I love? Casseroles! I think they are one of the easiest ways to get a meal on the table when you are feeding a family.

    Some of my favorites are Chicken Bacon Ranch Casserole, Chicken Broccoli Casserole, Enchilada Casserole, Cheeseburger Casserole, and Meatball Casserole.

    Today we are combining to of my loves to create this Keto Buffalo Chicken Casserole. I think you are going to agree that this one deserves to become a part of your meal rotation.

    Is Buffalo Sauce Keto Friendly?

    Yes! Most all buffalo sauces I've run into are keto friendly. But make sure you check the label if you are buying a brand you are unfamiliar with just to make sure.

    Serving Suggestions

    I most often serve this casserole as a complete meal on its own, but sometimes I want to add some extra green to our table. Here are some great options.

    • Roasted Green Beans with Parmesan are a simple to make side that even kids love.
    • Keto Asparagus is quick to make and never fails to delight. You can make it in your oven or air fryer.
    • I never get tired of these crispy Keto Brussels Sprouts.
    • A simple side of celery sticks is lovely to add a layer of texture and crunch.

    Can This Recipe Be Made Ahead?

    You can put this casserole together up to two days ahead of time and keep it sealed in the refrigerator. You can expect the cauliflower to get a little softer than if you had cooked it fresh, but the taste will still be good.

    Leftovers will keep for about two days in the refrigerator.

    Reheating

    You can reheat this recipe in the microwave, but I generally prefer to reheat recipes in the manner in which they were initially cooked.

    Make it Easier

    • Use pre-cut cauliflower florets.
    • Rotisserie chicken makes this a breeze.

    How to Make Keto Buffalo Chicken Casserole

    Start by roasting your cauliflower on a parchment-lined baking sheet. To do this, toast the cauliflower florets with the oil and seasoning. Arrange them in a single layer and bake.

    Next, once you’ve got the cauliflower in the oven, make your sauce. Bring the cream to a simmer and then add the cream cheese and buffalo sauce. Cook until the cream cheese melts.

    Reduce the heat to low and stir in cheddar cheese, blue cheese, garlic, and seasonings. Cook until the cheese melts.

    Toss the sauce with the chicken and cauliflower. Transfer to a casserole dish and top with the remaining cheese. Bake.

    Keto Buffalo Chicken Casserole

    This Keto Buffalo Chicken Casserole has all the buffalo flavors that I love in the confines of one dish.  It is the kind of cheesy comfort food that never gets old.

    Ingredients

    • 1 head cauliflower cut into florets
    • 1 tablespoon avocado oil
    • 1 teaspoon smoked paprika
    • ½ teaspoon sea salt
    • ¼ teaspoon fresh ground black pepper
    • ¾ cup heavy cream
    • 8 ounces cream cheese cubed
    • ½ cup buffalo sauce
    • 1 ½ cups shredded cheddar cheese divided
    • 1 ¼ cups blue cheese divided
    • 1 teaspoon garlic powder
    • ½ teaspoon sea salt
    • ¼ teaspoon fresh ground pepper
    • ¼ teaspoon cayenne pepper
    • 1 pound cooked chicken cubed

    Instructions

    • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
    • In a large bowl, toss the cauliflower with the avocado oil, smoked paprika, salt, and pepper. Arrange the florets in a single layer and bake for 18 minutes.
    • While the cauliflower is baking, bring the cream to a simmer over medium heat. Add the cream cheese and buffalo sauce. Cook, stirring often, until the cream cheese melts.
    • Reduce heat to low and stir 1 cup of cheddar cheese, 1 cup of blue cheese, garlic powder, salt, black pepper, and cayenne pepper. Cook until the cheese melts.
    • Toss the sauce with the chicken and cauliflower and transfer to a 9 x 9 casserole dish. Top with remaining cheddar and blue cheese.
    • Bake for 20 minutes.
